Quick Fry Tomcod

Ingredients

  • Use a cast iron skillet and heat over high heat.
  • Melt butter (200 ml for a 10-inch skillet).
  • Put in the fish (it can be partially frozen) but it absolutely must be covered with flour, and then cook on both sides.

Steps

  1. For a successful quick fry tomcod the Centre de Pêche Marchand & fils reveals its secrets!
  2. Continue cooking over medium heat until the flesh is white.
  3. If you are using a gas stove, simply lower the heat.
  4. If you are using an electric stove, you must place the skillet on an element that has been pre-heated.
  5. Cooking tomcod this way will not soften or break while cooking.
  6. Serve the fried fish with tartar sauce and lemon juice.
  7. Choose a simple and easy drinking wine. Red wine goes well with this meal.
  8. Frying is one of the exceptions where you don’t have to serve a white wine with fish. Beer also pairs well with this dish.
